Savoury Oats Porridge (Vegan Breakfast Oats)

Savoury oats porridge is a vegan and healthy breakfast recipe.  It is a quick and easy to make dish loaded with vegetables and flavours.

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

  • 2 Tablespoon Oil
  • 1 Teaspoon Cumin
  • 2 Dry red chillies broken
  • 1 Carrot finely chopped
  • 5 Beans finely chopped
  • ¼ cup Green peas
  • Turmeric a pinch
  • 1 Teaspoon Chilli powder
  • 1 cup Oats
  • 1.5 cups Water
  • Coriander handful (chopped)
  • Salt as required

Instructions

  • Heat oil in a skillet on medium heat, add cumin and let it crackle.
    2 Tablespoon Oil, 1 Teaspoon Cumin
  • Add red chillies and saute for few seconds until it is aromatic.

  • Now add carrots followed by beans and green peas, saute and cook for 2 minutes or until vegetables are tender.
    1 Carrot, 5 Beans, ¼ cup Green peas
  • Add turmeric, chilli powder, salt and mix well.

  • Now add oats and saute for a minute.

  • Add water, mix well and cook for 5 minutes or until water is almost absorbed by oats and you get desired consistency.

  • Finally, add coriander and turn off the heat.

  • Enjoy hot and delicious savoury oats.

Notes

Feel free to use up old random veggies lying in the refrigerator that is about to end up in the trash. This way you can have less waste and save money.
You could add cumin powder, coriander powder or garam masala to add more flavours to the porridge.
Adjust water as per your required consistency.
