Mini Yogurt Cherry Phyllo Cups | Filo pastry canapes

Mini yogurt cherry phyllo cups are a perfect party finger food to serve the guests. These tasty little treats recipe is packed with deliciousness, simplicity and versatility. These bite size dessert pastry cups are made with store-bought phyllo pastry sheets, filled with yogurt mixture and topped with nuts and glazed cherry. Perfect for parties, picnics as a stress free dessert. These little crunchy sweet cups will definitely become a showstopper dessert.

Ingredients

1 Cup = 250ml ; 1 Tablespoon = 15ml ; 1 Teaspoon = 5ml

    For phyllo cups:

    • 2 sheets Phyllo pastry sheets /Filo pastry sheets
    • 2 tablespoons Melted butter

    For yogurt mixture:

    For topping:

    • 1 teaspoon Almonds chopped
    • 1 teaspoon Walnuts chopped
    • 24 Glace cherries

    Instructions

    To make phyllo cups:

    • Preheat oven to 180C /Gas mark 5.
    • Meanwhile take one sheet of phyllo pastry and cover the rest with damp cloth to prevent them from drying out.
      2 sheets Phyllo pastry sheets /Filo pastry sheets
    • Take one filo pastry sheet, apply butter and cut them into 24 equal squares. Each square about 2.5 x 2.5 inches.
    • Now apply butter to muffin tin moulds and place 2 squares one top of other with each at slight angle to the one underneath in each mould of mini muffin tin. 
      2 tablespoons Melted butter
    • Repeat with rest of the pastry squares until all the moulds of muffin tin are filled.
    • Bake for 8-10 minutes until pastry cups are crisp and golden brown, allow them to cool down completely and then remove phyllo cups from the tin. Now crispy and crunchy phyllo cups are ready to be filled.

    To make yogurt filling:

    • Combine yogurt, sugar, ground cardamom, whisk until all ingredients are well blended. Adjust sugar depending on how sour your yogurt is. Refrigerate the yogurt until you are ready to assemble.
      1 cup Greek Yogurt, 3 tablespoons Sugar, small pinch Ground Cardamom

    To assemble:

    • When you are ready to serve, fill each pastry cup ¾ th full with yogurt mixture (approximately 1 tsp), top it with nuts and finally place a glace cherry on top.
      1 teaspoon Almonds, 1 teaspoon Walnuts, 24 Glace cherries
    • Delicious and tasty yogurt cherry phillo cups are ready to enjoy.

    Notes

    You may stack up to 5-6 layers of phyllo sheet in each mould of muffin tin to get a extra thick phyllo cups.
    Assemble the yogurt cherry phyllo cups just before you serve to prevent them from getting soggy and soft. Alternatively let guest assemble themselves. 
    Be sure to apply butter to muffin tin. This not only helps brown the phyllo cups it also helps to remove these cups from moulds.
    Don't worry about making them look perfect as phyllo sheet will fold over in different spots and sometimes it will be sticking out of muffin moulds.
    Phyllo cups, yogurt can be made well in advance. If you plan to make phyllo cups the night before a party then keep these cups uncovered in cool and dry place to ensure they doesn't lose their crunchiness.
    This recipe can be easily modified to include any fruits and nuts of your choice.
    You may use dry roasted nuts to get a toasty flavour.
    In this recipe I have used store bought glace cherries you may swap it with fresh pitted cherries.
    You may use piping bag to fill the yogurt in phyllo cups.
    You may swap sugar with honey, maple syrup, coconut sugar or any sweetener of your choice.
    Foe vegan version, substitute dairy yogurt with coconut yogurt or any plant based yogurt.
