Watermelon Salad (Vegan, Oil-free + Video Recipe)

Watermelon salad is a super light, fresh, sweet & spicy summer salad that is made with few ingredients, minimal efforts and in just 10 minutes! It is almost a addictive dish.Oil free, gluten free & vegan salad is a great party recipe to enjoy all summer long.

Deliciously sweet and spicy watermelon salad that has sweetness from watermelon is complemented with spicy heat flavour of black pepper. Lime juice and mint elevates flavour of the salad.

This salad makes a good side dish for lunch or dinner, it even makes a great lunch on its own. This salad is easy to make and a perfect side dish for BBQ parties, potlucks or picnic.

Watermelon salad recipe variations

This fabulous salad has a great flavour on its own, so few refreshing ingredients and a bit of lime juice is all it needs to elevate the flavour. Cucumber, sliced tomatoes makes a great refreshing addition to the salad. You could add ripe avocado, honeydew melon or any other types of melon. You can swap in basil or coriander for mint. Almonds could be replaced with walnuts, melon seeds or pumpkin seeds.

Ingredients for watermelon salad

Watermelon: Fresh seedless watermelon chopped into bite size pieces.

Nuts: Almonds adds a great crunchy texture to the salad.

Herbs & vegetables: I’ve used mint and lime juice to elevate the flavour of salad.

Spices: Coarsely crushed pepper adds a spicy heat factor to the salad.

Instructions

In a medium bowl, combine watermelon cubes, mint, lime juice, almonds, salt and pepper.

Toss until everything is well combined. Taste and adjust seasoning if necessary.

Ingredients

1 cup = 250ml ; 1 tbsp = 15ml

  • 540 gms (3 cups) Watermelon chopped
  • handful Mint chopped
  • 50 gms (1/3 cup) Almonds sliced
  • Lime juice from 1 lime
  • Salt as required
  • Crushed pepper as required

Instructions

  • In a medium bowl, combine watermelon cubes, mint, lime juice, almonds, salt and pepper.
